Turkey and Ham Pie

We always had ham on Christmas Eve, when I was young, and this is a good way to finish up leftovers. Serves 6-8 depending on quantities:

Gently fry a large chopped onion in 2 tbsp olive oil, then add 2 cloves crushed garlic and 2 chopped leeks. Fry for another 5 minutes to soften the leeks. Add 1 heaped tbsp plain flour and stir for 1 minute, then gradually stir in about 200ml milk and 200ml chicken stock (or use leftover gravy, and/or dregs of white wine/champagne/beer, and/or cream). Bring to a simmer and allow the sauce to thicken a little. Stir in your slices/chunks of ham and turkey (or chicken), and you could add other leftover vegetables, such as potatoes, squash/pumpkin, peas, carrots, broad beans etc. Tip into a large pie or other oven proof dish, top with (bought) puff pastry and bake at 180C for about 40 minutes until golden on top and bubbling. Alternatively top baked potatoes with the sauce and meat mixture.
