Squash and Pumpkin Ideas
Squash and pumpkins are not the strongest flavoured vegetable, but they are great for picking up other flavours. These ideas depend on how many you are feeding, but start by peeling the squash/pumpkin, and cutting into either wedges or 2cm cubes, and roast for about 40 minutes coated in 2tbsp olive oil until tender and just browning, with:
- red onion cut in wedges, 100g crumbled dolcelatte and slices parma ham.
- chilli flakes, roquefort and marjoram/oregano.
- ground coriander, chilli flakes and whole garlic cloves, then add a bag of baby spinach and grated cheddar and return to the oven to melt the cheese.
- chopped garlic, 1tbsp sugar, 1 tbsp white wine vinegar and 1/2 tsp cinnamon.
