Really Easy Chocolate Biscuits
Perfect for making with children! Makes about 30 single biscuits:
- 200g softened butter
- 100g castor sugar
- 200g self-raising flour
- 50g cocoa powder
- 1 tsp lemon juice
Cream the butter and the sugar until pale and fluffy, add the flour, cocoa, and lemon juice and mix to form a stiffish dough. (Alternatively put the whole lot in a food processor). Using your hands take dollops of the mixture about the size of a walnut, form into an approximate ball, and place on a greased baking sheet. Dip a fork in water and gently use it to flatten the balls a little. Bake at 180C for 12 minutes, then carefully remove to a wire rack to cool (they will harden as they cool, and the fork leaves attractive ridges).
Delicious as they are, you can also sandwich two together at a time with a chocolate cream made by beating together 2 heaped tablespoons chocolate powder, 1 tablespoon coffee, 50g softened butter, and 4 tablespoons icing sugar until you have a soft cream.
