Cold Cucumber and Avocado Soup
A quick, refreshing summer soup, for the hot summer that has been forecast! Serves 2 or 4 as a starter:
- 1 cucumber
- 1 tbsp sugar
- 2 ripe avocados
- 1 clove garlic (optional)
- 2 tbsp plain yoghurt
- 5 mint leaves
- 2 tbsp white wine vinegar
- ¼ pint chicken or vegetable stock
Put all the ingredients into a food processor. Season with plenty of freshly ground black pepper, and a little salt. Whizz everything together, pour into bowls, and garnish with a sprig of mint. Serve with warm rolls.
