Courgette Fritters
If you are fed up with courgettes at this time of year, try these for a light lunch or starter. Serves 2, or 4 as a starter:
- 340g grated courgette
- ½ tsp paprika
- 140g self raising flour
- 1 red chilli finely chopped (optional)
- About 75ml milk
- ½ tsp ground cumin
- 1 egg
- 2 finely chopped spring onions or shallots
Mix all the ingredients in a bowl, adding a little more or less milk, until you have a thick batter. Heat 1tbsp olive oil in a frying pan, and drop tablespoons of the mixture into the pan, where it will spread out. Allow to cook until golden (about 3-5 minutes), then flip over and cook on the other side. Serve hot with a tomato salsa, made by chopping up fresh tomatoes with chopped chilli, parsley and a dessertspoon each of Thai fish sauce (or white wine vinegar) and sugar.
