Leftover Christmas Pudding Trifle
Cut about 250g Christmas pudding into cubes and put in an attractive bowl. Add a jar of fruit in liquor (maybe lurking at the back of a cupboard!), or 2 tins of drained mandarin segments with 2 tablespoons sherry. Whisk the juice of 1 lemon, 2 tablespoons of castor sugar, a 250g tub of mascarpone or 250ml half fat creme fraiche, and roughly 300ml double cream until thick. Spread over fruit, chill and decorate with some crystallised ginger.
