Warm Avocado and Bacon Salad
For those sunny but not too warm days.
For 2 people:
- 1 large ripe avocado
- 2-4 rashers of streaky bacon
- Vinaigrette dressing
- cubes of white bread (optional)
- A few cherry tomatoes, halved (optional)
- Two large handfuls of salad leaves of your choice, garden mixture, rocket, little gem or baby spinach all work well
Chop the bacon into smallish pieces and fry until crisp, with the cubes of white bread if using
Meanwhile peel and slice your avocado
Toss the salad leaves in a little of the dressing
Arrange on two plates, scatter over the tomatoes if using.
Place the avocado slices on top, spoon over the hot bacon and croutons, if using, plus a little more dressing
Serve with some good bread for a lunch or light supper
