My Mum's Tea Bread

This is a nice easy cake which both keeps and freezes well:

In a large mixing bowl soak the fruit and the sugar in the tea (and brandy if using) for at least 4 hours, overnight is better
Mix in the egg
Add flour, baking power and your combination of spices
Mix together very well

Pour into a 1lb loaf tin, which has been lightly greased
Bake at Gas Mk 4/160C Fan/180C for around 1 to 1 ¼ hours or until cooked

This cake is best aged for 2/3 days before eating or freezing
