Roast Parsnips with a Twist
Parsnips should be eating well after all this cold weather so for a slightly different roast try them this way, Serves 6:
- 6 large parsnips
- 6 large sprigs of thyme
- 2 tbl runny honey
- 1 tbl grain mustard(opt)
Prepare your parsnips and cut into large chunks
Parboil for 5 minutes or so
Roast in good fat or oil at 200deg C/ gas mark 6 for 20-30 minutes
Add thyme leaves, honey and mustard, if using, turn over to ensure they are all covered
Roast for a further 15-20 minutes or until soft, golden and sticky
If you like spicy food then use chopped rosemary and a good pinch of chilli flakes instead of the thyme and mustard.
