Chinese Lemon Chicken
The Chinese new year started on 26th January, so why not get together with some friends to celebrate the Year of the Ox with this really easy meal. Serves 4:
- 2 large chicken breasts
- 2 tbsp cornflour
- 1 egg
- 2 tbsp sweet chilli sauce
- Rind of 1 lemon, juice of 2
- 1 crushed clove garlic
- Bunch of spring onions, cut into 2cm lengths
Slice the chicken breast into strips crosswise. Mix the egg, garlic, lemon rind and cornflour, then add the chicken and coat well. Heat 3tbsp olive or vegetable oil in a frying pan, and fry the spring onions and chicken until golden and cooked (about 5 minutes). Add the lemon juice and sweet chilli sauce, with about 3 tbsp water to loosen, heat through, and serve with rice and steamed pak choi, or fresh baby leaf spinach cooked in a large pan with 2tbsp soy sauce, 1cm of fresh ginger grated, 1 tsp sugar, and a splash of sesame oil.
Finish the meal with bananas, split, fried quickly in a large knob of butter, 2 tablespoons of honey and a sprinkling of sesame seeds.
