Cream Crackers
These are slightly special to make at Christmas and also, nicely wrapped, make an interesting home-made little present.
- 1½ oz unsalted butter, cut into small cubes
- 8oz strong white flour
- 1 tsp baking powder
- large pinch salt
- 6 tbl single cream
- ground sea salt to serve
Pre-heat the oven to 160C Fan/180C/Gas Mk 4
Grease two large baking trays with extra butter
Sift flour and baking powder into a large bowl, add salt and the small cubes of butter
Rub the butter into the flour until the mixture has the texture of breadcrumbs, or use a food processor to get the same result
Stir in the cream and gather together to make a firm dough, add a little water if required
Roll out the dough as thinly as possible, pressing down quite hard with a rolling pin, on a floured surface
Cut into 3” circles or other shapes as required
Arrange on the greased trays, prick lightly with a fork and sprinkle with some sea salt
Bake for 10-15 minutes or until just golden
Allow to cool on a wire rack and store in a tin or other air tight container
