Baked Apples
Serves Four:
- 4 medium to large cooking apples
- 3oz soft butter + more for the dish
- 3oz soft brown sugar
- 4oz raisons
- 2 tbl whisky (optional)
Pre-heat the oven to 160C/Fan/180C/Gas Mk 4
Core the apples and score a very fine line around the centre of the skin to prevent bursting then place in a buttered ovenproof dish
Cream together the butter and sugar, add the raisons and whiskey, if using
Fill up the apple cores and spread any remaining mixture over the top
Bake for 30-40 minutes or until soft
Optionally use sultanas and calvados or brandy instead of raisons and whisky
For a sharper pudding add the grated zest of a lemon and a little lemon juice to the butter and sugar mixture
For a sweeter one try adding some cream about half way into the cooking time to make a toffee'ish sauce around the apples
