Bloody Mary Sorbet

If you have a glut of tomatoes, this makes an impressive and refreshing starter, and of course keeps in the deep freeze. Great for a Christmas or New Year treat!

Cut about 1kg of tomatoes in half and spread out on a baking tray. Bake at 200C for about 20 minutes until squishy, (or gently cook in a pan with a little water). Rub the juice and flesh through a sieve into bowl, then add the juice of a lemon or lime, a good dash of Worcestershire sauce, a shake of celery salt, a grind of black pepper, and a dash of tabasco. You can make it as strong or as spicy as you like. Pour into a freezer container, and freeze.

Take out of the freezer a good half hour before serving, break up the sorbet with a fork and spoon into dishes or glasses. Pour vodka over to taste.
